What's the easiest country to go for to get a visa outside of Thailand now for the longest possible time without having to prove anything as such (I'm cash in a shoe box kind of guy),or easier/same to do it from thailand?

As others have stated, the bank statement and airline ticket is not a new requirement, and has been part of the requirements for a 60-day VISA since 2012 per the Royal Thai Embassy website in DC.  Attached is a pdf page dated 11/26/2012 showing the Royal Thai Embassy in DC posted requirements when I applied for my 60-day VISA, and its been the same when I applied in 2013, 2014 and 2015.   In addition to the stated requirements they add:

Consular officers reserve the right to request additional documents as

deemed necessary and also reserve the right to reject any application without

having to provide reason.

 

I now see that this policy has been in effect for a number of years. However, it is only recently that it has been enforced.  In my trips to LOS from 2012-2015 I was never required to provide a ticket or bank statement when applying for my visa.
