How common is peanut sauce in Thai restaurants in Pattaya?

Yes, satay sticks as above. Penang curry has peanuts sometimes. There are peanuts in Masaman curry. There are roasted peanuts in som tum. The closest thing to what is actually a peanut sauce is with the satay sticks.

 

You don't generally order it as a side dish. If you want some, order some satay.

I think satay / peanut sauce is a Malaysian / Indonesian thing.

It often comes loaded with sugar, which puts me off rather.

Pad Thai generally has crushed peanuts. Western recipes for Pad Thai often use peanut sauce.

In the west, making anything served in "Thai peanut sauce" is passed off as Thai food or more honestly as Thai Fusion food. But there isn't any main dish served in a peanut sauce like that in Thai food in Thailand ... it's a side dip for satay. The western peanut sauce used as part of main dishes is pretty much a variation of peanut butter sauce for sate sticks.  Yes roasted peanuts are also put on pad Thai.
