Stupid question from a naive Yank....

What's the difference between a cumberland sausage and a traditional English sausage?

To my untrained eye (and stomach), "cumberland" always indicated "English-style".

Typical ingredients.

Some home made recipes may differ slightly in the spice dept.

  • 900g pork shoulder
  • 900g pork belly
  • 1 tablespoon salt
  • 2 tablespoons ground white pepper
  • 110g fine breadcrumbs
  • 2 1/2 tablespoons dried sage (optional)
  • 2 tablespoons dried chives
  • 1/2 teaspoon ground coriander
  • 1 teaspoon ground nutmeg
  • 1 1/2 teaspoons ground mace
  • 3m to 3.5m (32mm) natural hog casings

To be a correct representation of a cumberland (named after the region of NW Englandshire where they originated) it should be coiled, however we get them as link sausages in most supermarkets.

Seems like the owner puts food quality above all, doubt she would serve anything subpar, even if sourced from elsewhere.

Are the English sausages imported ?, or are there companies in Thailand that actually make them  ?

Read the whole thread Jay. She makes them herself to an English recipe.

There are several businesses, here in Thailand, who produce sausages/bacon/pies/frozen-curries etc.

For example one called Sausage-King, near where I live in Chiang Mai, you'll see their products for-sale in places like Foodland or Siambury's.

Went for dinner last night.  It was good, but not a place I'd go out of my way to visit again.

Recently had a Brekky Bun from Kungs, was really good, possibly best quality sausage I have had in Thailand. Think it was 125B. Hit the spot.

Will return next week and try her regular breakfast.

Had their Maxi brekky roti recently and was really good, had a spicy kick, a tad over priced at 129B and does not come with tea.

Yes, correct... Kung posted it on her Facebook today. The old Loaf building.

I am also a big fan of Kungs, and very pleased they are taking on the premises accross the road, because once the tourists come back the current premises would have been way too small!

They said they may keep the old premises too. Good luck to them.

I too am a fan. Was recommended to her by Ricky from Pandoras a few years back when she just had the little stall on Buakhao. It's great to see someone doing well, especially in these times. He was a sly awd bugger tho as he would get me to pick us a couple up and take them to eat outside his bar 555

Great food and friendly staff.

I am glad they are moving too as the small location was the only thing keeping me from going there more often.

They are a great source for grab food too.
