Lard. Where to buy lard?

Been trying to perfect my Carnitas recipe.

Pork shoulder simmered 3 hours in chicken broth, orange juice, coke, cloves, cumin, chili powder, bay leaf, cilantro, lime, onion, garlic, salt, pepper, then fried or broiled crispy brown. 

Very nice but want to try frying in LARD like they do in Mexico  

Where can I buy LARD I wonder?

 Anybody?

No idea where to get lard but damn, this already looks fantastic...

@jiz   London Pie in Jomtien sells lard.

I believe LP's lard is also available through Villa Market at The Avenue and maybe some other supermarkets.  Give them a call.

I have in the past seen lard sold under its name in German (schmalz) at the supermarket on the lower level of Centra lFestival,  but your best bet is probably London Pie.

SMEG? I had to look it up. I think you mean SMEGMA. 

Smegma is a malodorous, opaque white or yellow substance composed of shed epithelial cells (dead skin) and sebum (oily secretions) produced by the sebaceous glands of male and female genitalia. 

 

I don't have any SMEGMA but come on over and scrape some out of your teeth. LOL

Thanks EVIL, That's the stuff. Didn't know of this place, London Pie. I phoned Yorkies in that same neighborhood. No joy.

I'll report back after my next batch. Not sure how much LARD I want to be consuming. The 'broiled' carnitas retain more flavor but not crispy on the edges like the fried stuff.

My Cambodian gardener loves them. I dollop a bit of SriRacha sauce on there along with the ElCharo Mexican Salsa. Nice.

Seems to me, Carnitas Tacos could be served up from a food cart and easily compete with the Shwarma sellers.

Well,  other than Big Girls Agogo I can’t help with a shop...but

 

we can buy pork shoulder here (Melb) with fat on or fat off.  

If we are heading for carnitas, we buy the fat on version.   After a slow cook you will have collected plenty of fat/lard for a good fry up.

I buy my tortillas there but hadn’t noticed the lard.

Thank for the Lard recommendations. Trekked out to London Pie. Yep. That was the missing ingredient. 

I’m gonna lock down this recipe, good enough.

Really reminds of the carnitas tacos I enjoyed in Salinas. 

Now I need to work on my salsa.

Why not make your own lard as who knows how old the stuff is at Villa, and probably cheaper and  its very easy to do. Just need pork fat which you can get at any Makro, Tesco store and render it slowly in a pot.

Good to know.

Bought the stuff at London Pie Shop. 2 pacs, enough to last me quite a while.

There was another customer buying lard as well. 

The aroma and taste really hits home.
