I will be spending 3 weeks in LOS in April, and would like to head down to Hua Hin for a couple of nights. I've never been to Hua Hin so any hotel recommendations would be much appreciated.

I've stayed at Thipurai City hotel (not to be confused with Thipurai Beach Hotel) - small rooms but nice, new, modern, and VERY close to Soi Binthabat and the beach. Just booked for next weekend, good specials on Agoda...

Have a look at bann Nilrath.less than 5 mins walk from Poon Suk and Bintabaht. Nice rooms and a roof pool (no pool bar) set back fro the main road via driveway so no road noise.
