Sorry to diappoint you, but I think what you described is an American dish only served in Thai restaurants in the USA.

Thai Home Lanna restaurant in Jomtien used to serve that dish sometimes but the place is closed now.

It is not an American dish. It's definitely a Thai dish but it's much much more popular in the USA than here. 

The people at Thai Home explained to me it's a lot of work to prepare so that's why even though it was on their menu, they didn't have it all the time. 

Obviously things develop differently in different countries. 

How many Thais have pad Thai for dinner at a sit down Thai restaurant? Common in the USA but it's still a Thai dish. 

Another funny thing about Thai restaurants in the U.S. is how so many people order Thai iced tea with their meal and that's rare at a sit down restaurant here. Still a Thai drink. 

A very similar stuffing for the fried stuffed chicken wings (glass noodles, minced pork, spices) is more commonly found here stuffed into fried squid. 

Again, totally Thai food. 

The barn like Thai food court place on Pattaya Klang not far from 2nd used to have a place that had the stuffed squid dish on the menu. Assume it's still probably there, just haven't been lately.

I don't know of a current place in town that does it with the wings.  

 

Purple Space Monkey on the same road as Thai Home just like Thai Home is out of  business. 

 

I remember many years ago when the stuffed wings was first seen in a Thai restaurant in the U.S. city I was living in. A very authentic and high quality Thai restaurant actually. The public went mad and they became known for that dish and it was hard to get a table. Now, yes, it's nationally popular.

It really is a good dish. 

Weirdly, the first link doesn't have woon sen, mung bean noodles. Never seen this dish in Thailand or the U.S. (squid or wings) without the noodles as part of the stuffing.

OK, I guess you can use vermicelli rice noodles or the mung bean woon sen noodles. I think it's better with woon sen.

I've never heard of this but it does look pretty good. Is this more of an appetizer or a meal? Also is there a certain part of the US where this is more popular?

It's definitely an appetizer.

It's found anywhere there are Thai restaurants in the USA which is of course all over the country.

Not all of them of course.

That is actually one of my pet peeves with restaurants in Thailand, especially Thai restaurants.

They are so lazy that most dishes that require advance preparation work have been struck off the menus or replaced with easier ersatz.

one example are springrolls, most rolls served in thai restaurants are yucky and most come straight from Macro's freezer.

 

I have yet to see a Thai restaurant in Pattaya serving proper spring rolls made with meat filling and rice paper.

It was even worse than that.

Of the many times I ate there, they only had it one time.

It was always on the menu though.

One time they told me they will never have it, so stop asking.

But then another time they remembered I wanted it and said they had it now as they had prepared it for a party or something.

Frankly it wasn't a very good version of it and I wouldn't have ordered it again there even if they had it (and were still open).

.. however, if you will overnight in BKK, P Kitchen, once one my Thai family's favorite restaurants (sadly, now surrendered to the tourists), has Thai-style stuffed chicken wings .. ordered them this evening .. quite nice.

.. TripAdvisor.com scores P Kitchen 5/5, but reviewers are overwhelmingly farang, so their view of authentic Thai food is imperfect .. still, it is a good Thai restaurant, but the menu is now skewed to farang-Thai.

.. I prefer more traditional Thai, so did not care for Long Table's kitchen .. my kids refer to food served at these restaurants as mutant Thai .. these guys were raised on upcountry Thai, and believe me, they know Thai food.

Never been to either Long Table or Rabbit, I found they serve them there while doing research. Mostly just eat street food or hole in the wall places around pattaya. Every time I come to pattaya I always take a day trip to chatuchak market via east BKK bus station, BTS. So P Kitchen will definitely be visited this time.
