I have a Macbook Air and I'm thinking of updating my phone to a Galaxy S5

 

Does anyone know if it is a simple process to download video from the Galaxy to the Macbook?

 

Is it as simple as plug and download?

The Galaxy should mount like an iPhone - or as any digital camera does (no drivers required). You then use Photos to pull it all in...there's really no difference.
