What kind of fish is the dry salted fish that the street hawkers cook?

Had this on my last trip, really enjoyed it, also what are the shell fish they sell too.... They were lovely with the chilli sauce.

That particular fish apparently isn't even native to Thailand as I have been informed by some of the locals. It was apparently introduced as a gift to King some time ago from Japan.

It was bred here, as I understand it! 

 Pla Nin was a gift from Japan. Pla Tabtim was cross bred in Thailand from the Pla Nin.
