Definitely the last Estragon review for a while! But I really am blown away by the quality and price of their dishes.

I think there's a combination of factors that make it so good. First of all he's a great chef who loves what he does. He doesn't talk much, but ask him about his cooking and you can see how passionate he is about preparing the best quality food with the best ingredients.

Next, he's found a real niche, dishes that not only lend themselves to pre-packaging, but actually improve as a day or two goes by, with the meats soaking up the flavour of his exquisite sauces.
He can prepare them at his leisure - no pressure from customers waiting to be served, no fancy side dishes needed. On the contrary, the meats and sauces are so much of a taste sensation that you really only need relatively plain accompaniments.

So to today's hospital food - I got out for an hour, just enough time to pick up a 'poulet basquaise' at the Estragon, and do a quick trip into town. A friendship salad for 45 baht, mainly potatoes, was all I needed.
The poulet basquaise set me back 160 baht. So with the salad, 205 baht. Haven't seen better value in Pattaya for that kind of quality. This sauce was the best yet.

L'Estragon is on Khao Noi in E. Pattaya, nearly level with soi 9. Shut Sunday afternoon. Packed out today with 'Anglo-Saxons' (as chef put it) today.
