I stayed at the saphire lodge in October 2012 and they had a big bed and a single in the room I was in. Also is was a very nice place to stay and very comfortable!

Most hotels will put an extra bed in the room also all of the LK group hotels have access to a child bed. I think it's about 500 baht a night extra.

Inn House has something like that.

Residence Garden has one and two bedroom apartments.  A kid can easily sleep on the large sofa in the 1br. If you book via Pattayatalk website you can get rate of 1400 or so for 1BR.  Handy hotel for Jomtien Beach daytime and Pattaya nights as its on the main baht bus route from Jomtien to North Pattaya.
