Hi all

 

Does anyone know the name of the chilli sauce Pattaya restaurants and eating place serve you when you order chicken and rice. It is a clear sauce served in a small white bowl which has red chilli's floating on it. I am asking this cos I really love it.

I think you mean phrik nam pla ?

 

Basically Fish Sauce mixed with lime juice and chopped chillis added.

I was surprised to learn it has added sugar!

 

Garlic,lime,chilli,fish sauce is ok......but sugar?

 

I wonder if thats a standard recipe....I would try and have it without,but does that make it too sharp?

I am also surprised it has added sugar.

 

I was hoping someone would say you can buy ready made bottles of this in the Uk - I'm sure it would sell well if it's not already available. I have trawled the internet but with no joy !

The recipe does include sugar, I guess to offset the sharpness of the lime.

 

You can buy sachets of it, in the basement food court at Central Festival. You'll find it in the condiment section. It's called 'Oyster' brand Fish sauce with chilli. They come in a red and white plastic bag containing about 20 mini sachets.

 

But it's really easy to make your own!

Near everything cooked or prepared in this country is loaded with sugar

love this stuff. I make it home here for dipping prawns in or my home made sushi. easy to make.

 

2 fresh chillies

2 garlic cloves

15ml/1 tbsp granulated sugar (sometimes I use brown sugar)

45ml/3 tbsp thai fish sauce (nam pla)

juice of 1 lime or 1/2 lemon

 

smash it all up with mortar and pestle, then add lime/lemon to taste.

this is just Fish sauce with chili , this is in thai nam pla prik (nam=water pla=fish prik=chili)

What have been described is what I think is nam pla pak chee , comes to seafood.

 

This is one recipe

 

1-2 tablespoons fish sauce (nam Pla)

2 tablespoons water

1 tablespoon lime juice

2 tsp palm sugar

4 sliced Thai chiles (adjust to desired heat level)

1 teaspoon grated ginger

2 cloves garlic minced

1 teaspoon minced shallots

Handful of cilantro coarsely chopped

So don't always just pass by that perhaps lovely lady with the waiting smile just because she is a little older or a little more pom pui © @ kevinq

If it is clear, it is probauly nam prhik, nam prhik pla is fish based. most sauces are just chillie vinegar, some with sugar, which is palm sugar, available in the west, but expensive.

How hot is the chilli sauce?

Birds eye chilles are around 50,000 to 225,000 scovilles depending on type which is pretty hot.

 

Tabasco is 30,000 to 50,000 for comparison.
