Once you get your Thai motorcycle licence it covers you for any size of motorcycle. So yes one licence for all bikes is your answer.

Just a thought, if I have a Thai bike license would I be able to use that to claim a bike category on my UK license ?

No. In the UK all EU car licences are valid and there is an exchange policy with a few countries who are judged to have a comparable standard test to the UK. Obviously the Thai test isn't. A Thai could legally drive a car on a Thai licence for up to a year but after that would need to take a UK test. As a UK subject you are required to have a UK licence, car or bike.

There is no reciprocal arrangement for bike licences at all. Riders are required to take a UK bike test to legally ride.
